With Unicorn Toast and Mermaid Toast, it seems like brightly colored desserts are all the rage right now. I’m not sure why, but all I know is that my 7-year-old daughter can’t get enough of them. So, we thought we’d continue to ride the wave and post this recipe on our site as well.
This Rainbow Sugar Cookies Sandwich recipe is great because it is so fun and easy to make. This is one where you will definitely want to get your kids into the kitchen to help. These are the perfect cookie recipe for birthday parties, holiday parties or they would even be something fun to bring into a potluck or a pitch-in. These would certainly brighten up the table!
What Is A Sugar Cookie Sandwich?
Much like a Whoopie Pie, a sugar cookie sandwich is simply a sandwich made out of two pieces of sugar cookie with icing between them. In a Whoopie Pie, chocolate cake is often used and, traditionally, marshmallows in the middle. But a lot of people also use anything from icing to buttercream frosting.
We thought that a would be fun to substitute that chocolate wafer or cake for a rainbow colored sugar cookie! Why? Because it’s a lot more fun!
Rainbow Sugar Cookies Sandwich Recipe
Ingredients
For the cookies
- 1 stick butter, softened
- ½ cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 ¼ cups all-purpose flour + extra for rolling
- 1 tsp baking powder
- 1 tsp salt
- Red gel food coloring
- Blue gel food coloring
- Green gel food coloring
- Yellow gel food coloring
- Purple gel food coloring
For the center
- 1 stick butter, softened
- 2 cups icing sugar, sifted
- 1-2 tbsp whole milk
- 1 tsp vanilla extract
Instructions
- Use an electric mixer to beat together butter and sugar until creamy.
- Add egg and vanilla extract and beat some more.
- In a separate bowl, mix together flour, baking powder and salt.
- Add dry ingredients to wet ingredients and mix until cookie dough forms.
- Divide cookie dough in 5 equal parts. Color each one with separate food coloring. Knead until each cookie dough portion is completely tinted.
- Roll all cookie dough colors into a large sphere. Be careful here, while we want the colors to mix together, we don’t want them mixed together too much.
- Wrap cookie dough in plastic and refrigerate for one hour.
- Remove the cookie dough from refrigerator and line a cookie sheet with parchment paper and set aside.
- Preheat oven to 375 degrees F.
- Add flour to a clean working surface as well as on a rolling pin.
- Roll out cookie dough so that it’s about ¼ of an inch thick.
- Using a circular cookie cutter, about 2 ½ inches in diameter, cut out circles of your cookie dough. Place gently on lined baking sheet about 1-2 inches apart from each other.
- Bake for 7-9 minutes and allow to cool on a wire rack.
- Using an electric mixer, beat together butter, confectioners’ sugar, whole milk and vanilla extract.
- Once buttermilk is fully mixed, scoop into an icing bag with Wilton tip #10 attached.
- Flip over half of your cookies and add frosting. Sandwich with another (unfrosted) cookie.
This recipe will yield 6-10 cookie sandwiches. Of course, if you want to make more, you could easily double the ingredients in this recipe. Just be careful when mixing the ingredients together, you want the colors to have a nice mixture but you don’t want them to “bleed” too much into one another. This would result in just sort of a “grayish” color.
What Filling Should I Use In My Sugar Cookie Sandwiches?
This recipe will yield you a nice buttercream frosting, which we think works perfectly. But you could also use a more traditional icing or even whipped cream to make it a little lighter. The cookies would also work wonderfully to make ice cream sandwiches with. Just soften some vanilla (or any flavor!) ice cream and slather between the two rainbow sugar cookies. Now you have a super fun frozen treat!
