Salted Caramel Chocolate Cookie
My husband is addicted the combination of sweet and savory. He loves peanut butter cups, salted caramel and chocolate covered bacon(!). So, these chocolate caramel cookies are certainly a recipe that he is very excited about. This nice, rich cookie is loaded with chocolate and caramel chips. But it’s the sprinkle of salt on top that really gives this cookie a big kick in the rear end.
The ingredients are simple:
Salted Caramel Chocolate Cookies Ingredients:
- 1 cup all-purpose flour
- ¼ cup high quality cocoa powder
- 1 tsp baking soda
- Pinch salt
- 1 large egg
- 1 cup granulated sugar
- ½ cup chocolate chips, melted
- ½ cup butter, melted
- 1 cup caramel chips
- 1 tbsp rock salt
Instructions:
- Line two cookie sheets with parchment paper and set aside.
- Preheat oven to 350 degrees F.
- In a small bowl, sift together dry ingredients: all-purpose flour, cocoa powder, baking soda and salt. Set aside.
- In a larger bowl, whisk together egg and granulated sugar until creamy.
- Add melted chocolate and melted butter into wet ingredients and mix until well combined.
- Slowly add dry ingredients into bowl of wet ingredients and mix with a wooden spoon.
- Once cookie batter has formed, fold in caramel chips.
- Drop mounds of cookie batter onto lined cookie sheets, each mound should be about 1 ½ inches in size. Be aware, these cookies will spread as they bake, so make sure to space them out enough between each other – and drop put 6 per cookie sheet.
- Sprinkle a bit of rock salt on each cookie mound.
- Bake for 12-14 minutes. Allow to cool on a wire rack for about 5 minutes before serving. Enjoy!

Quality Ingredients? Do They Matter?
Yes! We bake a lot of cookies here in this house (well, my husband does….). He is a cookie connoisseur and has been endlessly striving for the perfect chocolate chip cookie recipe. He is a big advocate of using quality chocolate chips, vanilla extract and butter for the proper chocolate chip cookie. So, I’d pay a little more money to get good chocolate and caramel chips for this caramel chocolate cookie recipe. Also, use quality rock salt. It’s totally worth the extra bucks and trip to the store to get quality salt for this recipe. DON’T just use your table salt!
Dress These Cookies Up!
There are a other ways to liven up this cookie even more than it already is. One great idea is to drizzle some melted caramel over the cookie. Or, for an even richer cookie, you could use dark chocolate chips. These salted caramel chocolate cookies would also be the perfect thing to make an ice cream sandwiches. Some nice, creamy vanilla ice cream between two of these decadent cookies would be AMAZING!
