No one is for sure! Our best guess is that this looks like a shipwreck of random ingredients all smashed into one another. It’s honestly not to most photogenic of recipes, so don’t let the photos throw you off. But it is delicious, we promise!
Shipwreck Casserole Ingredients
- GROUND BEEF – Brown the ground beef before adding to casserole. We recommend lean ground beef for this recipe.
- ONION – Chopped. We use yellow onion for this recipe. But you can use white or red onion.
- GARLIC – Minced fresh garlic. Please don’t use the stuff in the jars!
- HERBS AND SPICES – We use a combo of chili powder, paprika, cumin, salt and pepper.
- KIDNEY BEANS – Drained and rinsed.
- TOMATO SOUP – This is our secret ingredient that really makes this casserole have it’s deep, rich flavor!
- POTATOES – Peeled and diced.
- CHEEDAR CHEESE – Shredded. We always recommend buying a block of cheese and shredding it fresh instead of buying the pre-shredded stuff.
Shipwreck Casserole Recipe
- Preheat the oven to 375 degrees and grease a 9×13 baking dish with nonstick cooking spray.
- Brown the ground beef in a large skillet with the onion and garlic.
- Season with chili powder, paprika, cumin, salt, pepper, kidney beans, and tomato soup.
- While the ground beef is cooking, arrange half the potato slices in the bottom of the casserole dish.
- Pour half the ground beef mixture on top of the potatoes.
- Add the remaining potatoes, then top with remaining beef mixture.
- Cover and bake in the preheated oven for 1 hour, then remove the cover and sprinkle with shredded cheese. Return the pan to the oven to bake for 15 minutes, until the cheese is melted and the potatoes are tender.
Storage, Reheating and Freezing
Store leftovers in an airtight container in your refrigerator. Leftovers should be good in your fridge for about 4 days. You can reheat in the microwave or in your oven at 350 degrees.
Shipwreck Casserole freezes well. Just let it full cool after baking and put in a freezer safe container or freezer bag. It should be good in your freezer for about 3-4 months. Thaw overnight in your refrigerator.
Notes, Tips and FAQs
- DO YOU NEED TO BROWN THE GROUND BEEF FIRST? – Honestly, we’ve seen versions that have you put raw ground beef into the casserole dish and bake with all the other ingredients. We aren’t fans of this, it seems like it would be way too greasy.
- ADD VEGETABLES – This recipe would be great with some corn, peas, carrots, broccoli or any other veggies that sound good to you. Yes, you can use frozen vegetables.
- HOW TO PREVENT CHEESE FROM BURNING – If your casserole isn’t quite done but the cheese is starting to burn, you can top it with aluminum foil.
- LIGHTEN YOUR CASSEROLE – Substitute ground beef for ground chicken or turkey to make this dish a little lighter.
