With Unicorn Toast taking over social media, we are seeing all sorts of colorful creations that folks are posting pictures of. The great thing about Unicorn Toast is that there are so many different things that you can do with it. It really is like a painting on a piece of toast and you are the artist. Let your imagination run wild!
Well, I’d like to introduce you to the Unicorn Toast’s sister, Mermaid Toast. Now you can continue to create colorful concoctions for breakfast, a dessert or a midday snack. Some versions of Mermaid Toast use fruit or vegetable juices to color the cream cheese. While that is super cool. we wanted to make a version that was quick, easy and that you can do with your kids.
This would be a great idea for a rainy or cold day when the kids are stuck inside. It is like decoration Christmas cookies, but you can do Mermaid Toast any time of the year!
The ingredients are super simple:
Ingredients:
- 4 pieces of toast, toasted
- 8 oz. cream cheese, softened
- Violet gel food coloring
- 2 tbsp sweetened coconut flakes
- ½ banana
Instructions:
- Divide your cream cheese into 2 bowls. Color one with a drop of violet gel food coloring and whip to get it completely tinted.
- Place cream cheese in separate piping bags (so one piping bag will have your plain cream cheese and the other, the purple cream cheese).
- Pipe cream cheese dots in a row, right on your toast. Alternate between the plain cream cheese and the purple cream cheese.
- Place an offset spatula in the middle of a dot and swipe sideways. Repeat with all the dots in the row. Pipe out more dots, overlapping your row of swiped cream cheese and repeat. (Hint: clean your spatula as you go).
- Repeat until toast is completely covered with cream cheese.
- Sprinkle coconut flakes on one side of the toast. Cut pieces of banana and place on one corner. Enjoy!
These ingredients and instructions are just a beginning template for you to start with. Don’t worry if your version doesn’t come out looking exactly like these pictures. That is what makes this such a fun recipe. Feel free to experiment with different colors and ingredients. Drizzle some honey on top of the toast or add some more fruit like blueberries or raspberries.
