What Is A Cordon Bleu?
Cordon Bleu is a variety of Schnitzel (thinned meat that is usually breaded and fried). It likely originated in Switzerland in the middle of the 20th Century. Initially, it was made with Veal. Put Pork and Chicken soon used for this dish. The meat is thinned out using a hammer or a tenderizer and then wrapped around Swiss Cheese and Ham. It’s breaded and fried.
Our Casserole Version takes a lot of this work out and you can just throw all the ingredients into a baking dish! Yum!
Chicken Cordon Bleu Ingredients
Here is what you’ll need to get started!
- CREAM OF CHICKEN SOUP – If you’re in a pinch and all you have is another “Cream of” Soup, you can generally substitute with that. But it might change the flavor of the dish a bit.
- MILK – We used 2% milk for this dish. You can lighten it up with Low Fat Milk or make it a bit richer with whole milk.
- SOUR CREAM – Another option to lighten it up here with Low Fat Sour Cream or even use Greek Yogurt.
- EGG NOODLES – You’ll need to cook these according to the package directions before adding.
- HAM – Diced. Again, this is a great use for any leftover ham you may have laying around.
- CHICKEN – Cooked and diced. Read below for some ideas on the best way to cook chicken for this dish.
- SWISS CHEESE – One of the hallmarks of this classic dish. You really can’t have Chicken Cordon Bleu without Swiss Cheese. But if you really need to sub your cheese, you can with any other white, soft cheese.
- BUTTER – Unsalted and melted. We have enough salt in the ham and cheese, so make you you are using unsalted.
- PANKO BREAD CRUMBS – For that delicious buttery golden topping!
- ITALIAN SEASONING – Mix with your butter and breadcrumbs.

What Is The Best Way To Cook Chicken For A Casserole?
For this dish, you’ll need some cubed (or shredded) cooked chicken. What is the best way to get some cooked chicken? For dishes like this, we prefer one of three ways:
- BOIL THE CHICKEN – Sure, if we are just eating a chicken breast for dinner, this wouldn’t be the tastiest way to prepare it. But for this recipe, it works great. It’s simple and quick.
- INSTANT POT – We love our Pressure Cooker and the Instant Pot is perfect for this recipe. And the chicken cuts/shreds so easily out of a pressure cooker!
- BUY A ROTISSERIE CHICKEN – Skip the cooking altogether and just grab a rotisserie chicken from the store!
Leftovers, Freezing and Storage
Leftovers can be stored in an airtight container in your refrigerator. They should be good in your fridge for about 4-5 days. You can reheat leftovers in your microwave at 30 second intervals until warm.
Chicken Cordon Bleu Casserole freezes well too! Just allow the casserole to fully cool and put into a freezer safe container. Date it and store it in your freezer for up to 4 months. Allow to thaw overnight in your fridge. Reheat small portions in the microwave or oven. Or, to reheat the whole casserole, cover it with aluminum foil and reheat at 350 for 30 minutes.
Notes, Tips and FAQs
- ADDITIONS – Feel free to add some veggies to this dish. Spinach, Broccoli, Mushrooms or Bell Pepper would be great.
- ADD DIJONN MUSTARD – Our version doesn’t have Dijon Mustard in it, an ingredient often found in Cordon Bleu. You can add a tablespoon to the sauce to give it that Dijon kick if you’d like.
- WHAT TO SERVE WITH CHICKEN CORDON BLEU CASSEROLE? – This is a pretty rich and hearty dish. So a nice side green salad would be great with it!
