Cake Mix Cookies? Where Have You Been All My Life?
I’ve found a new addiction: Cake Mix Cookies! While I’ve heard about them before, I had never really gotten around to making any and I didn’t realize how delicious they were and how EASY they are to make. A couple of weeks ago, I need to find a quick cookie recipe for a neighborhood Christmas party, so I used some white cake mix to make some cookies sprinkled with red and green sprinkles. They were soooo yummy and were a big hit at the party. Thus, my addiction has started. Now I’m thinking of a whole bunch of other cake mix cookie creations that I can make!
Now that Valentine’s Day is quickly approaching, I thought it would be fun to make some Strawberry Cake Mix Cookies for the occasion. These cookies are so easy to make, they would be a great activity with your kids on a cold February weekend afternoon! They would also make a great treat to bring into work for a potluck, pitch in or cookie exchange!
Strawberry Cake Mix Cookies
As I mentioned above, there are only 4 ingredients, and you probably already have most of these in your kitchen!
Strawberry Cake Mix Cookies Ingredients
- 1 box, 15.25 oz, strawberry cake mix
- 1 tablespoon flour
- 1/2 cup oil
- 1 egg
Strawberry Cake Mix Cookies Instructions:
- Preheat oven to 350 and line a baking sheet with parchment paper.
- In a large mixing bowl, add cake mix and flour and mix well.
- Stir in oil and egg until well combined.
- Use a tablespoon portion scoop to scoop dough onto prepared baking sheet.
- Gently press to flatten with your hand or the bottom of a drinking glass, until the cookies are about 1/2″ thick.
- Bake for 8-10 minutes or until center is set and bottom begins to brown. Cool for 2 minutes on the baking sheet before removing to a cooling rack to cool completely.
Notes And Tips
This recipe should make about 30 cookies. Of course, you can liven these cookies up any way you want to. Putting some white frosting on top would be delicious! Or you could sprinkle them with red and white sprinkles! I’ve seen some versions with some Valentine’s Day themed M&Ms mixed in as well! These taste delicious with a glass of milk! Or you could even serve them warm with a dollop of vanilla ice cream on top! The sky is the limit!
