Storage and Freezing
Cookies can be stored in a tupperware at room temperature. They should be good for about 5 days.
You can freeze this recipe, either before or after baking. To freeze before, simply make the cookie dough as instructed. Flatten dough balls on cookie sheet and then put the cookie sheet in the freezer for about 1 hour. Once dough is frozen, you can transfer to a Freezer Bag. When ready to bake, there is no need to thaw, just add 1-2 minutes to baking time.
If you want to freeze these cookies after baking, allow to fully cool, then transfer to a freezer bags. To thaw, just leave out a room temperature. They should be good in your freezer for up to 4 months.
Notes, Tips and Variations
- MIX INS AND FROSTING? – We kept these pretty simple, but the great thing about these Strawberry Cake Mix Cookies is that you can really have fun dressing them up. Add chocolate chips or white chocolate chips. Or put an icing on them! Or you could make some buttercream frosting and use that to make cookie sandwiches!
- HOW TO KNOW WHEN YOU COOKIES ARE DONE? – To keep these cookies soft and chewy, we definitely don’t want to overbake them. Just keep an eye on them and you’ll know they are ready to come out when the tops just start to get some cracks on them.
- EASY CLEANUP – We are just using one bowl to mix everything together, so cleanup is super simple. But we also advise using parchment paper on your cookie sheet. This helps the cookies not to stick but also makes cleaning up so simple!
- DO YOU NEED TO REFRIGERATE YOUR DOUGH BEFORE BAKING? – No, you don’t. But some people like to put their dough in the refrigerator for about 2o minutes before scooping on the cookie sheet. It just makes the cookie dough a little easier to work with!
This recipe should make about 30 cookies. I hope you enjoy this recipe for Strawberry Cake Cookies! Let me know how you like them in the comments and tell me if you’ve found another creative thing to add to them. Happy Valentine’s Day everyone!

I just made these..very disappointed. I followed the recipe exactly. Turned out very dry. It seemed like there wasn’t quite enough liquid. The dough was very dry, hence dry cookies. Disappointed as I wanted to take them to work for Valentines day! Any suggestions would be vmreally helpful.
Gwen says
On these cookies the flour is it all purpose or self rising?
Kathy says
All purpose. I will adjust that.

Roberta Marsh says
Try adding white chocolate chips. Other cake types are spice with peanut butter chips, red velvet with white chocolate chips, and as always yellow with any kind of chips. My favorite is lemon with lemon zest.
Kathy says
That sounds delicious. I love this idea! I’m going to try the white chocolate chips next.
