Fun Treats For Every Holiday!
I sometimes feel like just about every holiday has it’s own unique treats: Pumpkin Pie for Thanksgiving, Apple Pie for the Fourth of July and Cookies for Santa. There are a couple of holidays that seem to just center around candy, like Halloween and Valentine’s Day. But, in reality, there are a lot of great recipes that you can make that are a ton more interesting than buying some mini-size candy bars at the store.
Valentine’s Day Pudding Parfait
For instance, this Valentine’s Day Pudding Parfait is just the thing for Cupid’s favorite holiday this year. I love this recipe because it is something easy and fun that you can make with your kiddos one afternoon, or it’s something that you can whip up for a romantic dinner at home with your Valentine. The ingredients are super easy to find (you may already have most of them in your pantry!).
Valentine’s Day Pudding Parfait Ingredients:
- Brownie mix + all the ingredients to make it
- 2 cups vanilla Oreo crumbs (approx. 30 Oreos, crushed using a food processor)
- 2 cups vanilla pudding (alternatively, you can use strawberry pudding)
- ¼ tsp pink gel food coloring
- 1 cup whipping cream
- 1 tbsp granulated sugar
- Pink sprinkles, for garnishing
Valentine’s Day Pudding Parfait Instructions:
- Prepare brownie mix according to package’s directions and set aside to cool
- Crumble up Oreos in a food processor.
- Begin by layering ½ cup of Oreo crumbs in the bottom of a wine glass. Repeat for the other wine glass. (Hint: You can even use a stemless wine glass!)
- Color pudding with gel food coloring and mix. Layer one cup of pudding in each wine glass.
- Divide remaining Oreo crumbs in each wine glass, layering it on top of the pink pudding.
- Break up the brownies into large chunks and layer approx. 1 cup’s worth in each wine glass. (You may have some brownies remaining, save for further snacking!)
- In a large bowl, beat together whipping cream and sugar with an electric mixer until whipped cream forms.
- Pipe out whipped cream using a piping bag and Wilton tip #1M on the top of each parfait. Top off with pink sprinkles. Serve and enjoy!
Pudding Parfait for Valentine’s Day Notes
This recipe serves two people, but you can easily double it if you have a larger crowd to feed. Also, if you want to make this pudding parfait a little more rich, you could certainly sub in the original chocolate Oreos for the vanilla one. Also, feel free to experiment with how big you want your brownies to be. You can crumble them up into smaller pieces if you have a smaller wine glass to work with. But, if you have the room, it might also be fun to have them in larger chunks! And, finally, we used homemade whipped cream for this recipe, but if you are really in a time crunch, you can obviously use store-bought whipped cream, I won’t judge!
