Crockpot Lasagna Soup Ingredients
- GROUND BEEF – We used 80/20 lean ground beef but you can use whatever you’d like. You can also use Italian Sausage, ground turkey or ground chicken.
- YELLOW ONION – Finely chopped. We like the sweeter, milder flavor of the yellow onion. But you can use red if you’d like.
- MINCED GARLIC – We highly recommend using fresh garlic, not the stuff that comes in a jar (Jarlick!!!!).
- ITALIAN SEASONING – You can easily make your own Italian seasoning if needed.
- TOMATO SAUCE – Canned Tomato Sauce. You can use low sodium if you are watching your salt intake.
- CRUSHED TOMATOES – Also canned.
- BEEF BROTH – Add richness to your soup.
- LASAGNA NOODLES – Use dry, instant noodles instead of fresh noodles. The fresh noodles will get way too mushy. You can also use any other larger Pasta noodle you may have hiding in the back of your pantry.
- RICOTTA CHEESE – Top with ricotta cheese just before serving for that classic, lasagna experience.
- MOZZARELLA CHEESE – Shredded. We always recommend shredding your own cheese instead of using the pre-shredded stuff at the store.
Slow Cooker Lasagna Soup Instructions
Perfect to warm you up on the chilliest of days, this is true comfort food! Serve it with some garlic bread to dip into it. Or a nice side salad to keep it lighter! Let’s get started!
- Brown the ground beef with the onion and garlic in a large skillet.
- When the meat is cooked through, drain it and pour it into the crockpot and season with Italian seasoning.
- Add the tomato sauce, crushed tomatoes, and beef broth. Stir to mix. Set the slow cooker to cook on low for 6 to 8 hours or high for 3 to 4 hours.
- When the cook time is up, remove the lid and break the lasagna noodles into the pot. Stir to mix.
- Replace the lid and set the slow cooker to cook on high for 30 to 40 minutes, until the noodles are cooked through. Serve in bowls topped with ricotta and mozzarella cheese.

- HOW TO STORE LASAGNA SOUP – You can store leftover soup in an airtight container in your fridge. This dish reheats fine in the microwave.
- CAN YOU FREEZE LASAGNA SOUP? – Lasagna Soup also freezes well. Just let it cool to room temperature and store in a freezer bag or freezer safe container. It will be good in your freezer for 3 months. Just thaw overnight in your refrigerator.
- ADDITIONS – Feel free to add some vegetables like mushrooms, zucchini or bell peppers to this dish. Or add some crushed red pepper for a little kick.
- DO I NEED TO USE RICOTTA CHEESE? – Nope, this dish will still be delicious without it. It just won’t have quite as much of that “lasagna flavor”. You can also top with Mascarpone or even sour cream if you’d like.
- CAN YOU MAKE LASAGNA SOUP GLUTEN FREE? – It’s easy to make this dish gluten free! Just make sure your ground beef is gluten free and then substitute your noodles for Gluten Free Lasagna Noodles. Barilla makes a good version.
- GARNISH – Sprinkle some fresh parsley, fresh basil, parmesan cheese, red pepper flakes, green onions or diced tomatoes.
