What Is Chicken Scampi?
The term “Scampi” is often used in the culinary world to describe a pasta dish cooked with butter, garlic and white wine. Usually, it is served with a prawn or shrimp (I’m sure you’ve heard of shrimp scampi!). But Olive Garden, the iconic casual dining restaurant, has made their Chicken Scampi famous featuring chicken as the protein! Now you can enjoy this dish at home with our easy recipe!
Chicken Scampi Ingredients
- CHICKEN – We use boneless skinless chicken breasts cut into small pieces. You can also use chicken tenders if you’d like.
- FLOUR – To coat the chicken.
- SEASONINGS – We use a mix of Italian seasoning, salt and pepper to season the chicken.
- OLIVE OIL – Any brand will work. It doesn’t need to be too fancy since we are just cooking with it.
- BUTTER – Unsalted. We DO like to always use a high quality butter. Not the store brand stuff!
- GARLIC – Minced. Please use fresh garlic cloves, not the stuff that comes in a jar (Jarlick!).
- DRY WHITE WINE – A chardonnay or sauvignon blanc
- RED PEPPER FLAKES – Please don’t omit this. It gives the dish a great little kick that works with all the other flavors.
- LEMON JUICE – Fresh lemon juice to give your sauce that zing.
- PARSLEY – As a garnish to add some flavor and color to the dish.
- PASTA – Use a thin spaghetti or angel hair pasta. But regular spaghetti would work too.
Chicken Scampi Instructions
- Toss the chicken pieces with the flour, Italian seasoning, salt, and pepper.
- Heat the olive oil in a large skillet over medium heat. When the oil is warm, add the chicken and saute until cooked through.
- Remove the chicken from the pan and set it aside.
- Add the butter to the pan, along with the garlic and saute for around 30 seconds.
- Add the wine and pepper flakes and simmer until the sauce is reduced by half.
- Stir in the lemon juice, parsley, and chicken. Simmer for five to 10 minutes.
- Stir in the cooked pasta.
- Garnish with more fresh parsley and shredded parmesan cheese before serving.
Storage, Freezing and Leftovers
You can store leftovers in an airtight container in your refrigerator for about 3 days. Reheat on the stove top while add a couple drops of water to the pasta to rehydrate it.
You can freeze Chicken Scampi. Just let it cool to room temperature and transfer to a freezer bag or freezer-safe container. Let it thaw overnight in your fridge.
Notes, Tips and FAQS
- DO YOU NEED TO SERVE SCAMPI WITH PASTA? – Not necessarily. This scampi sauce and chicken would taste great over rice or mashed potatoes.
- DO YOU NEED TO USE WHITE WINE FOR CHICKEN SCAMPI? – If you would like an version with no alcohol, you can easily substitute chicken stock for the white wine. Another wine-free pasta that is a lot like this is our Lemon Garlic Pasta.
- CREAMY SCAMPI – Add a little heavy cream or half and half during the cooking process to make the sauce creamier.
- FUN ADDITIONS – Add capers, bell peppers, diced onions, diced tomatoes, spinach, artichoke hearts, Kalamata olives or sun-dried tomatoes. And combination of these ingredients would make this dish even more delicious.
