How To Make Hot Chocolate Cookies
- PREHEAT THE OVEN AND COMBINE FLOUR, HOT COCOA MIX, BAKING SODA, SALT AND BAKING POWDER.
- IN ANOTHER BOWL, COMBINE SUGARS AND BUTTER UNTIL CREAMY. ADD THE EGGS AND BEAT UNTIL CREAMY.
- SLOWLY COMBINE THE WET AND DRY INGREDIENTS. BUT DON’T OVER MIX!
- FOLD IN CHOCOLATE CHIPS AND MALLOW BITS.
- SPOON ONTO COOKIE SHEET AND BAKE FOR 9-11 MINUTES.
A Note on Mallow Bits
The ingredients ask for Mallow Bits. These are different than Mini Marshmallows but can usually be found by the marshmallows in your grocery store. The Mallow Bits are a little harder (they are freeze dried) and work great in this cookie. You can also use mini Marshmallows if that is what you’ve got, but they will melt a lot more into the cookie (no necessarily a bad thing!) .
Storage and Freezing
Store leftover cookies in an airtight container at room temperature. They should stay good for about 4 days. These Hot Chocolate Cookies also freeze well. Separate them with parchment paper and store in a freezer bag or freezer safe container. They should be good in your freezer for up to 4 months. You can thaw at room temperature before enjoying.

- ROLL IN SUGAR – To add some sweet flair, you can roll the cookie dough balls in some sugar before baking.
- IMPROVISE CHOCOLATE CHIPS – We used semi-sweet chocolate chips, and they worked great. But the sky is the limit with the chocolate chips you can use. Use dark chocolate chips for a richer flavor. Or even peppermint chips for a more festive flavor!
- DOES IT MATTER WHAT KIND OF HOT CHOCOLATE MIX YOU USE? – Not at all. Just about anything will work here. There are a ton of different kinds and flavors of hot chocolate. Go crazy. Just don’t use the sugar free hot chocolate mix. It won’t work well in this recipe.

Hot Chocolate Cookies
Ingredients
- 2-1/4 cups all purpose flour
- 1/2 cup instant powdered hot cocoa
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- 12 tablespoons 3/4 cup, unsalted butter, softened
- 3/4 cup brown sugar
- 3/4 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup mallow bits dehydrated mini marshmallows
- 3/4 cup mini chocolate chips
Instructions
- Preheat oven to 375 and line a baking sheet with parchment paper. Set aside.
- In a small bowl, combine flour, hot cocoa, baking soda, salt and baking powder. Mix well and set aside.
- Add butter, brown sugar and granulated sugar to a mixing bowl and beat on medium speed until fluffy, about 5 minutes. Scrape the bowl down halfway through mixing. Add eggs and vanilla and beat well.
- Add half of the flour mixture and beat on low just. until combined. Add remaining flour mixture and beat just until combined.
- Fold in mallow bits and chocolate chips.
- Using a 1 tablespoon portion scoop, scoop dough onto baking sheet, keeping 2" apart. Bake 9-11 minutes or until set. Remove from oven and let stand on a baking sheet for 3 minutes before removing from pan and placing on a cooling rack to cool completely.
