Buckeye Brownies Recipe
- BROWNIE MIX – And the ingredients needed to make it. Any brand will do. Feel free to also use a homemade brownie recipe if you have one you love.
- PEANUT BUTTER – Any brand of Creamy Peanut Butter will work. You can substitute for Crunchy Peanut Butter if you’d prefer that.
- BUTTER – Use unsalted butter here. There is enough salt in the peanut butter.
- POWDERED SUGAR – Also called Confectioners Sugar. Makes our Peanut Butter layer a little sweeter.
- MILK – Added to the peanut butter to make it a little creamier. We used 2% milk. But you can use whole milk or half and half to make this a little richer.
- VANILLA EXTRACT – We always recommend using a high quality Vanilla Extract when baking. We don’t have a brand we prefer, just don’t use the store brand stuff.
- CHOCOLATE CHIPS – To be melted for the chocolate topping. We used Semi-Sweet Chocolate Chips and they work great. But you can go with Milk Chocolate or Dark Chocolate if that sounds good to you.
- BUTTER – To be melted and stirred in with the chocolate.
How To Make Buckeye Brownies
- Prepare and bake the brownie mix in a 9×13 pan according to the recipe instructions.
- When the brownies are finished baking, combine the peanut butter and butter in a medium bowl. Beat to combine.
- Add the powdered sugar, milk, and vanilla extract. Beat until smooth and creamy.
- Spread the peanut butter mixture over the top of the cooled brownies.
- Combine the chocolate chips and butter in a microwave-safe bowl. Cook on high in 30 second intervals, stirring between each interval, until the chocolate is fully melted.
- Spread the melted chocolate over the top of the peanut butter layer.
- Allow the chocolate to cool and harden before slicing and serving.
Leftovers, Storage and Freezing
You don’t have to store leftovers in the refrigerator. They are fine at room temperature. But, honestly, I like my brownies a little chilled. But that is my preference.
Buckeye Brownies are great to freeze! Just wrap in parchment paper or freezer wrap and put in a freezer bag or freezer safe container. You can cut them up into individual portions so you only have to take out what you want to thaw. You can thaw them at room temperature or even enjoy them as a frozen treat!
WHY IS MY PEANUT BUTTER LAYER SO HARD TO SPREAD?
This is one of the most common questions. Here are couple solutions.
- One reason is you may have used “Natural Peanut Butter”. While this is high quality peanut butter, it is not the best ingredient for this recipe. Just use the cheaper stuff for this!
- Your peanut butter may also be too cold. The milk you stirred in my have been really chilly and firmed up your peanut butter. Let it sit on the counter for a couple minutes or even put it in the microwave for about 10 seconds.
- If it is still feeling way too firm to spread, you can always try adding a little more milk. Do this in very small increments until you get the consistency you desire.
Notes and Tips
- USE PARCHMENT PAPER – We recommend lining your pan with parchment paper before adding ingredients to make getting these brownies out a lot easier.
- TOPPINGS – Want to make these Brownies even more fun? Add some crushed nuts, walnuts, pecans or almond slices to the top. Or add some sprinkles, peanut butter chips or even a dollop of whipped cream.
- CUT INTO SMALLER PIECES – As written, this recipe makes 15 regular sized brownies. But you can certainly cut them up smaller
