Cheeseburger Soup Ingredients
Here are the ingredients you’ll need to get started:
- GROUND BEEF – We used 80/20 lean ground beef. But you can use Ground Sirloin if you want a leaner soup. Or even substitute for ground chicken or ground turkey.
- ONION – Finely chopped. We like using a yellow onion for it’s sweeter, milder flavors.
- CARROT – Peeled and finely chopped.
- CELERY STALK – Finely chopped.
- GARLIC – We recommend fresh, minced garlic. But you can use the stuff in a jar if that is all you have.
- RUSSET POTATOES – Peeled and finely chopped.
- CHICKEN BROTH – Y0u can substitute with beef broth for a bit of a richer soup.
- VELVEETA CHEESE – Cubed.
- MILK – We used 2% milk. You can use whole milk or even half and half to make this soup even creamier. We don’t recommend anything leaner that 2% milk or you just won’t get that creamy texture.
- CORNSTARCH SLURRY – Equal parts cornstarch and water. This will thicken your soup up.
- SALT AND PEPPER – To taste.
How To Make Cheeseburger Soup
- Brown the ground beef with the onion, carrot, celery, and garlic in a large stockpot or Dutch oven.
- When the meat is cooked through, stir in the potatoes and chicken broth. Bring the mixture to a boil, then reduce heat to low and simmer for 30 minutes.
- When the potatoes are fork-tender, stir in the Velveeta, milk, and cornstarch slurry. Continue simmering another 10 minutes, until the soup has thickened.
- Season with salt and pepper to taste before serving.
Storage, Leftovers and Freezing
Store leftovers in your refrigerator in an airtight container. Leftovers should be good for about 4 days. You can reheat in the microwave or on the stovetop over a medium low heat. Stir until heated up.
I wouldn’t freeze this soup. With the creamy broth, I don’t think it would thaw very well.

- DO YOU NEED TO USE VELVEETA CHEESE FOR CHEESEBURGER SOUP? – No. You can use any “meltable” cheese in this recipe. Shredded sharp cheddar cheese, Swiss or even Pepper Jack for a little kick would work. But Velveeta Cheese gives this soup that nostalgic classic Cheeseburger feel.
- DRAIN THE GREASE – Be sure to drain the grease after browning the meat.
