Mashed potatoes are one of those dishes that just about everyone likes. I’ve don’t think I’ve seen many people pass on mashed potatoes. And one of my favorite side dishes has always been twice baked red potatoes. So… why not combine them both into this delicious casserole? These Twice Baked Potatoes are great to feed a crowd. A perfect recipe for a potluck, pitch in or a cookout! And this baked potato casserole will also work as a Christmas, Thanksgiving or Easter recipe!
Best Potatoes for Mashed Potatoes?
Obviously, with any recipe, it is important to make sure you are using the exact right ingredients. I always notice all the different kinds of potatoes in the produce section of my grocery store? Which potatoes are you supposed to use for what recipe? Which one would be best for making a mashed potato dish?
I’ve discovered that the general rule is that you want to use baking potatoes with higher starch content like Yukon Gold potatoes or Russet potatoes. Try to avoid “waxy” potatoes like red or white potatoes. You’ll really have to mash these up into more of a paste than anything else to get them to work.
Twice Baked Mashed Potatoes Recipe
This Twice Baked Mashed Potatoes Casserole really is super easy to make. Just peel, cut and boil your potatoes. Mix them with the other ingredients and throw them in the oven! This is a great option for entertaining because you can certainly make it ahead of time and simply reheat it. Or, you could mix all the ingredients together and store them in your refrigerator until it’s time to put it in the oven.
I also think that this would be a wonderful holiday side dish. It would be a great alternative to one of the traditional Thanksgiving side dishes that we all know and love!
So, without further ado, here is our recipe for Twice Baked Mashed Potatoes!
Twice Baked Mashed Potatoes Ingredients:
- 3 lbs of potatoes, peeled and cut into 1″ pieces
- 2 tablespoons butter
- 1/2 cup diced onion
- 1 cup chopped ham
- 1 cup sour cream
- 1/4 cup half and half
- 1-1/2 cups colby jack cheese, divided
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
Twice Baked Mashed Potatoes Directions:
- Place potatoes in a large pan or stock pot and cover with cold water, so the water is at least 1″ above the potatoes. Heat on medium high until boiling. Reduce heat to medium (or as low as you need to go so potatoes are still boiling but not over!) and continue to boil until potatoes are tender. Drain and return to pan.
- Preheat oven to 350 and grease a baking or casserole dish. In a large bowl, mash potatoes. Add butter and mix well. Stir in onion, ham, sour cream, half and half and 1 cup of cheese. Add salt and pepper and mix well.
- Pour into prepared baking dish and top with remaining cheese.
- Bake for 20-25 minutes or until center is hot.
Leftover Mashed Potato Casserole?
This recipe serves 10-12 people. If you have leftovers, it will keep in your fridge for a couple days and it’s one of those dishes that can taste just as good when reheated. You could also freeze the leftovers if needed! Depending on how much you have leftover, I’d divide them into the serving size you want to freeze individually in those portions. Simply wrap them in aluminum foil and put them into a freezer bag. Now you can have this dish on demand whenever you need it!
Reheating these Twice Baked Mashed Potatoes is pretty easy. You can either reheat them in the oven at 375 degrees in a covered dish or in the microwave at medium power. The time it takes to reheat them will depend on your portion size.
Variations For This Recipe
- INSTANT POT POTATOES – If you need to save some time on the mashed potato portion of this recipe, you can always use an Instant Pot to make them.
- BACON! – Also, we used ham in our version of this. But bacon would also work out really well. Simply cook the bacon in a skillet while the potatoes are boiling. Make sure you get it extra crispy so that you can crumble it. Once crumbled, just introduce it into the recipe where you would have put the ham in!
- SUBSTITUTE CHEESE – We used colby jack cheese. But you can sub for any cheese you’d like. Cheddar Cheese would work great!
- GARNISH – Garnish with a sprig of parsley as pictured. Or sprinkle some chopped green onions on top!
