It’s funny, my favorite part of Thanksgiving dinner isn’t the turkey, the stuffing or the desserts. It has always been the yummy casseroles and Thanksgiving side dishes!
It seems like every year, I am introduced to to some sort of new casserole that just blows me away. I certainly love a good Maple Roasted Acorn Squash, Green Bean Casserole or even this Corn Pudding Casserole! But, I’ve always had a special place in my heart for sweet potatoes. My entire family loves sweet potatoes as well (it’s just about the only culinary thing we all agree on!). So, I thought it would make sense to share this Sweet Potato Casserole! And I’ve made it super simple by using Canned Sweet Potatoes!

Can I make this Casserole with Fresh Sweet Potatoes?
Yes!
Using canned sweet potatoes cuts down on the time it takes to cook your yams. Instead of opening up a can, you could peel, cube and boil your potatoes for 15 minutes and then mash them like the instructions tell you to. You will need about three pounds of sweet potatoes.
Can I make Sweet Potato Casserole Ahead of Time?
Yes!
You can prepare the casserole ahead of time and keep in in the fridge overnight. If you go this route, you will need to cook the potatoes uncovered for an additional 20 minutes beforehand to warm the potatoes up before adding your marshmallow topping. This allows all of the potatoes to heat through.
Sweet Potato Casserole Directions
Ingredients:
- 2 cans sweet potatoes 40 oz each, drained
- 1/2 cup brown sugar
- 1/4 cup melted butter
- 3 tablespoons apple juice
- 1/2 teaspoon cinnamon
- 1 package, 10 oz, mini marshmallows
Directions:
Preheat oven to 350 and grease 9×13 baking pan with nonstick cooking spray. Set aside.
Mash canned sweet potatoes in a large bowl.
In a small bowl add butter, sugar, apple juice and cinnamon and mix well. Pour mixture into the large bowl of Potatoes and mix well.
Spread mixtures into prepared pan. Pat mixture flat with the back of a spoon. Top with marshmallows.
Bake for 20-25 minutes until marshmallows are puffy and sweet potatoes are heated through.

- 1 package 10 oz, mini marshmallows
