Pinwheel Sandwiches
Pinwheel sandwiches are the ultimate finger food appetizer. These are so much fun because there are so many thing that you can do with them. I’ve had fresh, cold pinwheel sandwiches deli meats and cheese on them. And I’ve had decadent, warm and soft pinwheel sandwiches fresh out of the oven.
For this recipe, we are going with the latter! These Spinach and Bacon Pinwheel Sandwiches are the definition of comfort food. The mixture of soft, warm cheese with the crunchy bacon give these pinwheel sandwiches a texture you won’t be able to get enough of.
Whether you are entertain friends for the big game or you need a fun and easy recipe for your office pitch-in, this Pinwheel Sandwich Recipe is just the thing. They will look great on the table and your guests won’t be able to stop picking them up!
Spinach and Bacon Pinwheels
Ingredients:
- 1 package frozen puff pastry, thawed/defrosted according to the package’s directions
- 2 tbsp butter
- 2 cups fresh spinach
- ¼ cup onion, diced
- 5 oz. cream cheese, softened
- ½ cup shredded cheddar cheese
- 3-4 cooked bacon strips
Instructions:
- Preheat oven to 400 degrees. Place puff pastry on a baking sheet that’s lined with parchment paper – set aside.
- Melt butter over medium heat in a frying pan. Add onions and allow to sweat.
- Add spinach and cook, mixing occasionally.
- Remove onion and spinach from heat.
- In a large bowl, fold together onion, spinach, and cream cheese.
- Crumble the bacon into the mixture and fold more.
- Using an offset spatula, spread the cream cheese mixture evenly on the puff pastry, leaving one inch from the end.
- Sprinkle with cheddar cheese.
- Starting from the top (in this case, the shorter side of the rectangle), roll the puff pastry – the end that has no spread will be the portion that seals the roll.
- Cut the roll to get pinwheels that are about ½ inch wide. Place gently on lined baking sheet.
- Bake for 15-20 minutes. Serve and enjoy!
This recipe will yield 15-20 pinwheels. Also please note that the measurements of ingredients for this recipe is to cater to a puff pastry sheet that’s about 9×11 inches in size.
