Chocolate Peppermint Cookies
The cool thing about this cookie recipe is that it is so easy! You simply start off with a nice, rich and chewy chocolate cookie recipe, add some caramel chips and then drizzle it with peppermint icing. And, just like so many recipes on this website, there are no tricky ingredients here and you probably already have a lot of these in your pantry!
Chocolate Peppermint Cookies Ingredients
Check out below for step-by-step instructions. But here is what you will need to baking!
For the cookies:
- LARGE EGG – It’s always best to let your egg come to room temperature before baking.
- SUGAR – White, granulated sugar.
- BROWN SUGAR – We LOVE cookies with light brown sugar! It gives depth to the sweetness
- BUTTER – Unsalted Butter. Like your eggs, let your butter soften to room temperature before adding to this recipe.
- CHOCOLATE CHIPS – We use semi-sweet chocolate chips. But you can use whatever you’d like.
- FLOUR – All Purpose Flour.
- COCOA POWDER – Make sure you are using unsweetened cocoa powder in this recipe.
- BAKING SODA – A leavening agent that makes these cookies soft and chewy.
- SALT – It’s always important to bake with salt to offset the sweetness of the other ingredients.
- CARAMEL CHIPS – This is our secret ingredient that sets these cookies apart from everyone else.
For The Peppermint Icing:
- WHITE CANDY MELTS – You’ll be melting this in the microwave for your candy drizzle on the cookies. For any extra boost of peppermint flavor, incorporate 1/2 teaspoon peppermint extract into the batch.
- PEPPERMINTS – Crush the peppermint candies into small bits. You can also use crushed candy cane if you’d like.
How To Make Chocolate Peppermint Cookies
- Line a baking with parchment paper and set aside.
- Preheat oven to 350 degrees F.
- In a large bowl, cream together egg and both sugars.
- Add butter and use an electric mixer to beat until smooth. Add melted chocolate and mix until all ingredients are well-incorporated.
- In another bowl, sift together all dry ingredients: flour, cocoa powder, baking soda and salt.
- Slowly add dry ingredients into wet ingredients and mix until cookie dough forms.
- Fold caramel chips into cookie dough.
- Use a cookie scoop to scoop cookie dough onto lined cookie sheet. We like to use silicone mats.
- Bake for 11-14 minutes. Allow to cool.
- In a microwave-safe bowl, microwave candy in 30 second intervals until completely melted. Be sure to stir between each interval.
- Pour melted candy into a piping bag and drizzle onto each cookie.
- Sprinkle each cookie with crushed peppermint.
- Allow to set on a wire rack before serving.
Storage, Leftovers and Freezing
Store leftovers in an Airtight Container at room temperature. They should be good for about 5 days.
You can freeze these cookies. Allow them to cool to room temperature. Then separate with parchment paper and put into a freezer safe container or freezer bags. They will be good in your freezer for up to 4 months. Allow to thaw at room temperature.
A Delicious Holiday Cookie!
These Chocolate Peppermint Cookies are fun to make with your kids on a snowy weekend afternoon. They’d taste great dipped in some hot chocolate or even coffee. These cookies are garnished with a little bit of crushed up peppermint candy. I’ve seen some versions of this cookie that sub out the icing for a lot more crushed peppermint. If that sounds like your jam, go ahead and try that! But I think the drizzle looks really cool on these cookies.
While this recipe makes 12-15 cookies, it is certainly easy to double if you need to make more for a larger crowd. We will definitely be making these this holiday season! Merry Christmas!
