What Is A Banana Split Cake?
This Banana Split Cake is a cake version of the famous ice cream treat! It’s got a buttery graham cracker crust that is layered with a light cream cheese filling, fresh bananas, pineapple and then topped with a whipped topping. Load some chocolate and nuts on top and, of course, a maraschino cherry, and you’ve got a cake that will get your attention!
How To Make Banana Split Cake
There are just a couple easy steps to making this cake. You’ll first want to make your crust, then your cream cheese filling. After that, it’s all about layering on the ingredients. CRUST INGREDIENTS
- GRAHAM CRACKER CRUMBS – We like to crush our graham crackers in a zip lock baggie. But you can also use a food processor.
- BUTTER – Unsalted and melted butter. Combine with with your graham cracker crumbs to make the crust.
CREAM CHEESE FILLING INGREDIENTS
- SUGAR – Any brand of white, granulated sugar
- CREAM CHEESE – Make sure your cream cheese is softened or you will really struggle to mix everything together.
- VANILLA EXTRACT – We always suggest using a high quality vanilla extract. Don’t skimp on the store bought stuff here.
- POWDERED SUGAR – Also called Confectioners Sugar. Adds sweetness to the filling.
TOPPING INGREDIENTS
- CANNED PINEAPPLE – We used crushed pineapple. But you could use the tidbits or even the pineapple chunks if you want. Make sure you drain the pineapple juice before adding it.
- BANANAS – Sliced. For this recipe, make sure the bananas aren’t too ripe or soft, you want them to stand up to the other ingredients and not get too mushy too quickly.
- FROZEN WHIIPPED TOPPING – Thawed for your whipped cream topping. We used Cool Whip but you can use any brand
- OPTIONAL TOPPINGS – Mixed nuts, chocolate syrup, rainbow sprinkles and maraschino cherries.
Storage, Freezing and Leftovers
Store leftovers in an airtight container in your refrigerator. You cannot keep Banana Split Cake at room temperature for more than an hour. Leftovers will be good in your fridge for about 3 days. But, the bananas will start to soften and brown almost immediately. So this dessert, really is best eaten fresh.
You can freeze this dessert. Wrap the dish in freezer wrap. Or put separate pieces in a freezer safe container. It will be good in your freezer for about 3 months. Thaw in the refrigerator or enjoy as a frozen treat!
Notes, Tips and FAQs
- CAN YOU USE FRESH PINEAPPLE? – You can. Although fresh pineapple usually isn’t as sweet and soft as canned pineapple. So it may change the flavor and texture of this dessert a bit.
- DO YOU HAVE TO USE A GRAHAM CRACKER CRUST? – Nope! I’ve seen some versions of this dessert with a Vanilla Wafer Crumbs Crust or an Oreo Crumbs Crust.
- OTHER TOPPING IDEAS – You can top your Banana Split Cake with other types of nuts (chopped walnuts, pecans or sliced almonds), caramel sauce, mini chocolate chips, fresh bananas, chocolate sprinkles or any other fun topping you can think of. You really can’t go wrong with this cake!
- NOT A PINEAPPLE FAN? – Some people like to add slices of fresh strawberries in place of the pineapple. Or, really, use any fruit that sounds good to you!
- TAKE NOTE OF THE CHILL TIME – While to total time to prep this dessert is under 15 minutes, you will need to chill it in the fridge for at least 90 minutes. So plan accordingly.

Banana Split Cake
Ingredients
- 2 cups graham cracker crumbs
- 1/4 cup butter melted
- 1/2 cup sugar
- 16 ounces cream cheese softened
- 2 teaspoons vanilla extract
- 1 1/2 cups powdered sugar
- 1 15- ounce can crushed pineapple drained
- 4 bananas sliced
- 16 ounces frozen whipped topping thawed
- 4 ounces chopped mixed nuts
- Chocolate syrup for topping
- Rainbow sprinkles for topping
Instructions
- Stir together the graham cracker crumbs, butter, and sugar until the mixture comes together.
- Press the graham cracker mixture in the bottom of a 9x13 baking dish. Place the dish in the refrigerator to chill for 30 minutes.
- Beat together the cream cheese, vanilla extract, and powdered sugar until smooth and combined.
- Spread cream cheese layer over the top of the chilled crust.
- Top the cream cheese mixture with a layer of sliced bananas.
- Spread the crushed pineapple over the top of the bananas.
- Cover with whipped topping and place in the refrigerator to chill for at least one hour.
- When ready to serve, drizzle chocolate syrup over the top of the cake and sprinkle with crushed nuts and rainbow sprinkles before slicing and serving.
