Cabbage Roll Soup
- GROUND BEEF – Use extra lean ground beef for this recipe. This will keep it less greasy.
- CABBAGE – One medium head. Core removed and chopped.
- ONION – Chopped. We use a yellow onion for it’s sweeter, milder flavor.
- GARLIC – Minced fresh garlic.
- DICED CARROTS – Peeled and diced.
- WHITE RICE – Uncooked.
- ITALIAN STYLE TOMATOES – 2 cans. These are the tomatoes with basil, garlic and oregano. Don’t drain.
- BEEF BROTH – Help makes this soup nice and rich.
- WORCESTERSHIRE SAUCE – Adds a depth to the flavor of this soup.
- BROWN SUGAR – Just a little brown sugar helps balance out all the flavors.
- SPICES – We use a blend of paprika, oregano, salt and ground black pepper.
Cabbage Roll Soup Instructions
- In a large stock pot, add beef, onion and garlic and cook over medium heat, stirring frequently until beef is no longer pink and onions are tender.
- Add carrots, and tomatoes. Mix well.
- Add rice, tomatoes and broth.
- Worcestershire sauce, brown sugar and spices. Mix well and heat over medium high heat until boiling. Once boiling, cover and reduce heat to simmer.
- Add cabbage.
- Continue to cook for 20-30 minutes or until rice and vegetables are tender.
Storage and Reheating
Leftovers reheat great! Just keep them in your refrigerator in an airtight container. You can reheat on the stovetop. You may need to add a little water to rehydrate the rice. You can also just reheat in the microwave.
Cabbage Roll Soup is freezes well. Just let it cool to room temperature and put in a freezer bag or a freezer safe container. It should be good in your freezer for around 4 months.

- 1 cup diced carrots
- 1/2 cup white rice
- 2 cans Italian style diced tomatoes (tomatoes with basil, garlic and oregano)
- 4 cups beef broth
- 1 tablespoon worcestershire sauce
- 1 tablespoon brown sugar
- 2 teaspoons paprika
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- chopped fresh parsley optional for serving
Instructions
- In a large stock pot, add beef, onion and garlic and cook over medium heat, stirring frequently until beef is no longer pink and onions are tender.
