When looking for an easy side dish that I know everyone will love, I usually don’t need to look much further than good old corn!
I love using corn in a side dish because there are so many things you can do with it. Sure, it tastes great all by itself (with a little butter on it!!!). But you can dress it up a bit to make some unbelievable side dishes with it.
Over the years, I’ve made this Corn Casserole with Cream Cheese, a Fresh Corn and Tomato Salad, Classic Creamed Corn and this Mexican Street Corn Salad. All these dishes have been huge hits in our family!

Fiesta Corn
Also, called Mexicorn, this dish is simple, easy and you are able to improvise it in a lot of different way to your own tastes! The sweet corn combined with the slight kick from the taco seasoning is a GREAT combination.
It’s a great recipe to use on your Taco Tuesdays! In fact, this Fiesta Corn can be a great taco filler all by itself. This is a great option if you have vegetarians to please!

- 2 12-ounce packages frozen corn
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 4 tablespoons butter
- 1 tablespoon taco seasoning
- Salt to taste if desired
Mexicorn: Notes, Tips and Suggestions
As I mentioned above, one of the great things about this Fiesta Corn Recipe is that it is easy to tailor to your own tastes! Here are some suggestions and tips for you!
- ADD FRESH CILANTRO AS A GARNISH– A great way to spruce up any Tex Mex dish is to chop up some fresh cilantro and add it as a garnish right before serving!
- ADD BLACK BEANS– You can make this Mexicorn go a little further by adding black beans to it. Just make sure you rinse them out VERY WELL before adding them to the dish or they will muddy up all your beautiful colors!
- ADD A LITTLE EXTRA KICK- For a slight kick, you can add some banana peppers to the skillet. Or, for a little more intense heat, you can add some diced jalapenos. Just make sure you are getting rid of all the seeds, or it may overpower the dish.
- BELL PEPPERS- We used green and red bell peppers in this dish. But feel free to change up the colors if you’d like! Orange or Yellow Bell Peppers would would great as well!
- DICE VEGETABLES AHEAD OF TIME- While this is a super easy recipe, the one thing that may take a little time is to dice up all of your vegetables. It’s a great idea to dice them all up ahead of time and keep them in a ziplock baggie in your refrigerator. That way, you can just dump them in when you need to!

Fiesta Corn
Ingredients
- 2 12- ounce packages frozen corn
- 1 red bell pepper diced
- 1 green bell pepper diced
- 4 tablespoons butter
- 1 tablespoon taco seasoning
- Salt to taste if desired
Instructions
- Add the corn, peppers, butter, salt, to the pan. Stir to combine.
- Add Taco Seasoning.
- Saute the ingredients over medium heat, stirring constantly, until the corn and peppers are cooked through, around 20 minutes.
