
Georgia Cracker Salad
We’ve made a ton of Pasta Salads on this website. But never a “Cracker Salad”. Generally speaking, a Georgia Cracker Salad usually has crackers, tomatoes and a hard boiled egg in it. A lot of people describe it’s taste as a “Tomato sandwich in a bowl”.
Depending on which recipe you stumble across, you can also find some additional ingredients and spices in it. Some people use saltines, some use Ritz crackers. Some don’t put egg in theirs. Some add mustard, some don’t. You get the idea.
This is one of the things we like about this salad dish! It’s one of those recipes that you can kindo tweak to your own liking. As for us, here is what we used to get started:
- 1 sleeve saltine crackers, crushed (see note about crushing)
- 1 cup real mayonnaise
- 1 large tomato, seeds removed and cut into small pieces
- 2 green onions, chopped
- 1 large hard boiled egg, sliced
- salt and black pepper
Notes, Tips and Variations:
- DON’T MAKE AHEAD OF TIME- This is one of the recipes that you don’t want sitting around for a while. It does NOT get better the longer it stays together. Once you stir everything together, and dice tomatoes, they will start bleeding and the crackers will start to get soggy. You want to prepare this right before serving. It only takes 5 minutes so shouldn’t be a problem.
- USE RITZ OR SALTINES- It doesn’t matter what you use for your crushed crackers. Everyone has their own preferences.
- SEED TOMATO?- You don’t NEED to do this. We just sort of removed the seeds as we were dicing it up. But the more you can remove, the better it will be.
- CAN YOU ADD A PROTEIN TO A CRACKER SALAD? – Yep! Add some shredded chicken, tuna or smoked salmon!
- USE QUALITY TOMATOES- You want to use a nice, ripe Tomato for this recipe. Organic or Heirloom would be the best tomatoes for this.
- DUKE’S MAYONNAISE- If your really want to dive into a true Georgia experience, use Duke’s Mayonnaise for your mayonnaise mixture. It’s a Georgia staple!
- SERVING SUGGESTIONS- Serve on a bed of lettuce for some extra garnish. Add some spicy brown mustard for an extra kick!

Georgia Cracker Salad
Ingredients
- 1 sleeve 4 oz, saltine crackers, crushed
- see note about crushing
- 1 cup real mayonnaise
- 1 large tomato seeds removed and cut into small pieces
- 2 green onions chopped
- 1 large hard boiled egg sliced
- salt and pepper
Instructions
- Crush crackers and dump in a large bowl.
- Add mayonnaise, tomatoes, onion and egg and mix well.
- Season with salt and pepper.
- Serve immediately.

Since I love anything with tomatoes I’m sure this recipe would be great! Although I’d like more tomatoes and God bless those yummy seed’s! If I couldn’t put the seeds in my salad I’d save them add a little salt and eat them… you won’t catch me tossing them that’s for sure! I will definitely try this salad but omit the egg!
I think a couple of strips of bacon would be a good addition.

I was wondering if we could add more boiled egg and omit the tomatoes. I might enjoy a few of the tomatoes since the juice and seeds are removed. The texture and seeds turn me off tomatoes

Yes. I think this is one of those recipes where you can tweak it to your own tastes. It’s really hard to mess this dish up!
