Southern Tomato Pie

CLASSIC SOUTHERN COMFORT FOOD!

Buttery crust, cheese sauce, bacon and juicy tomatoes are baked to bubbly perfection.

INGREDIENTS

– 1 single pie crust – 2-1/2 lbs fresh tomatoes – salt – 8 slices bacon chopped – 1/2 onion chopped – 1 tbsp minced garlic – 2 cups shredded cheese – 1/2 cup real mayonnaise – 1 tbsp dijon mustard – 1 egg – chopped fresh basil

Step 1

Preheat oven to 400. Slice tomatoes and layer on parchment paper. Sprinkle with salt and let sit for 15 minutes.

Cook bacon, garlic and onions in skillet until bacon is no longer pink.

In small bowl, combine eggs, cheese, mustard and Mayonnaise.

Put pie dough into pie plate. Layer half of Cheese mixture on top of dough.

Layer Tomatoes on top of cheese mixture.

Layer other half of cheese mixture on top of tomatoes.

Bake for 45 minutes.

Top with basil before serving.
