EASY DESSERT RECIPE

Light, sweet and zesty, it's like taking a little bit of summer in each bite!

INGREDIENTS

Cake Ingredients: – 1 box lemon cake mix – lime gelatin – 3/4 cup water – 1/3 cup vegetable oil – 1/3 cup key lime juice – 3 eggs – green food coloring Glaze Ingredients: – 1 cup powdered sugar – 2-1/2 teaspoons key lime juice Icing Ingredients: – 1 package 8 oz, cream cheese, softened – 1/4 cup butter softened – 1 teaspoon key lime juice – 3 cups powdered sugar – lime peel if desired

Step 1

Preheat oven to 350 degrees. Mix all cake mix ingredients.

Beat on low until smooth.

Scoop batter into prepared muffin cups.

Bake for 22 mins. Cool for 10 minutes before glazing. Poke 5-6 holes into each cupcake.

Mix glaze ingredients. Drizzle glaze on each cupcake. Let stand to cool completely.

Add cream cheese and butter to a mixing bowl and beat together.

Place icing in a pastry bag fitted with a large tip and pipe icing onto each cupcake.

Top with grated lime peels if desired.
