1poundground beef
1onionfinely chopped
2clovesgarlic
1teaspoonchili powder
1/2teaspoonpaprika
1/2teaspoonground cumin
Salt and pepper
15ouncecan kidney beansdrained and rinse
2 10.75ouncecans tomato soup
4potatoespeeled and sliced
2cupsshredded cheddar cheese
Instructions
Preheat the oven to 375 degrees and grease a 9x13 baking dish with nonstick cooking spray.
Brown the ground beef in a large skillet with the onion and garlic.
Season with chili powder, paprika, cumin, salt, pepper, kidney beans, and tomato soup.
While the ground beef is cooking, arrange half the potatoes in the bottom of the casserole dish.
Top with half the ground beef mixture.
Add the remaining potatoes, then top with remaining beef mixture.
Cover and bake in the preheated oven for 1 hour, then remove the cover and top with shredded cheese. Return the pan to the oven to bake for 15 minutes, until the cheese is melted and the potatoes are tender.
