Ingredients

  • 1 pound ground beef
  • 1 onion finely chopped
  • 2 cloves garlic
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper
  • 15 ounce can kidney beans drained and rinse
  • 2 10.75 ounce cans tomato soup
  • 4 potatoes peeled and sliced
  • 2 cups shredded cheddar cheese

Instructions

  • Preheat the oven to 375 degrees and grease a 9x13 baking dish with nonstick cooking spray.
  • Brown the ground beef in a large skillet with the onion and garlic.

  • Season with chili powder, paprika, cumin, salt, pepper, kidney beans, and tomato soup.

  • While the ground beef is cooking, arrange half the potatoes in the bottom of the casserole dish.

  • Top with half the ground beef mixture.

  • Add the remaining potatoes, then top with remaining beef mixture.
  • Cover and bake in the preheated oven for 1 hour, then remove the cover and top with shredded cheese. Return the pan to the oven to bake for 15 minutes, until the cheese is melted and the potatoes are tender.
