Ingredients
1small package3.5 oz, pepperoni, cut in half
1lbground pork sausage
1cupchopped onion
1red pepperseeded and chopped
2cans14.5 oz each, Italian Style Diced Tomatoes (tomatoes with basil, garlic and oregano)
2cans8 oz each, tomato sauce
2cupschicken broth
2teaspoonsItalian seasoning
1/2teaspoonsalt
1/4teaspoonground black pepper
1cupshredded Mozzarella cheese
Instructions
Add pepperoni to a large stock pot and heat over medium high heat, stirring occasionally until pepperoni is crispy. Remove from pot and drain paper towels. If desired, wipe grease from stock pot.
In the same stock pot, add sausage, onion and pepper and cook over medium heat, stirring frequently until meat is no longer pink and vegetables are tender.
Add tomatoes, tomato sauce and broth.
Add spices and mix well. Bring mixture to a boil over high heat and once boiling, cover and reduce heat to simmer. Continue to cook for 20 minutes.
When ready to serve, top with shredded cheese and crispy pepperoni.
