Hot Chocolate Cookies

Ingredients

  • 2-1/4 cups all purpose flour
  • 1/2 cup instant powdered hot cocoa
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 12 tablespoons 3/4 cup, unsalted butter, softened
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup mallow bits dehydrated mini marshmallows
  • 3/4 cup mini chocolate chips

Instructions

  • Preheat oven to 375 and line a baking sheet with parchment paper. Set aside.
  • In a small bowl, combine flour, hot cocoa, baking soda, salt and baking powder. Mix well and set aside.

  • Add butter, brown sugar and granulated sugar to a mixing bowl and beat on medium speed until fluffy, about 5 minutes. Scrape the bowl down halfway through mixing. Add eggs and vanilla and beat well.

  • Add half of the flour mixture and beat on low just. until combined. Add remaining flour mixture and beat just until combined.

  • Fold in mallow bits and chocolate chips.

  • Using a 1 tablespoon portion scoop, scoop dough onto baking sheet, keeping 2" apart. Bake 9-11 minutes or until set. Remove from oven and let stand on a baking sheet for 3 minutes before removing from pan and placing on a cooling rack to cool completely.
