Chicken Scampi

Ingredients

  • 1 lb boneless skinless chicken breast, cut into bite sized pieces
  • 2 tbsp flour
  • 2 tsp Italian seasoning
  • 2 tbsp olive oil
  • 1/2 cup butter
  • 2 tbsp minced garlic
  • 1 cup dry white wine
  • 1/4 tsp red pepper flakes
  • 1 tbsp lemon juice
  • 1/4 cup chopped parsley
  • 12 oz thin spaghetti prepared
  • Salt and pepper

Instructions

  • Toss the chicken pieces with the flour, Italian seasoning, salt, and pepper.

  • Heat the olive oil in a large skillet over medium heat. When the oil is warm, add the chicken and saute until cooked through.

  • Remove the chicken from the pan and set it aside.
  • Add the butter to the pan, along with the garlic and saute for around 30 seconds.

  • Add the wine and pepper flakes and simmer until the sauce is reduced by half.

  • Stir in the lemon juice, parsley, and chicken. Simmer for five to 10 minutes.

  • Stir in the cooked pasta.

  • Garnish with more fresh parsley and shredded parmesan cheese before serving.
