Ingredients
1/2cup1 stick, butter
1/2cupdiced green pepper
3ouncesfresh sliced mushrooms
1/2cupall purpose flour
1teaspoonsalt
1/2teaspoonground black pepper
1-1/2cupsmilk
1-1/2cupschicken broth
2cupschickencooked and shredded or chopped
1small jar2 oz, diced pimientos, drained
3cups6 servings, cooked rice, kept warm for serving
chopped fresh parsleyoptional for serving
Instructions
Melt butter in a large sauce pan and add green pepper and mushrooms. Over medium high heat, cook until mushrooms are tender, about 7 minutes.
Sir in flour, salt and pepper and cook over medium heat, stirring constantly until mixture begins to bubble.
Remove from heat and slowly stir in milk and chicken broth.
Heat over medium heat, stirring constantly until bubbly, Let mixture boil for one minute before reducing heat to low.
Stir in chicken and pimentos.
Add cooked chicken. Continue to cook for 5 minutes or until chicken is hot.
Serve on a bed of hot white rice topped with chopped fresh parsley if desired.
