Ingredients

  • 1/2 cup 1 stick, butter
  • 1/2 cup diced green pepper
  • 3 ounces fresh sliced mushrooms
  • 1/2 cup all purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1-1/2 cups milk
  • 1-1/2 cups chicken broth
  • 2 cups chicken cooked and shredded or chopped
  • 1 small jar 2 oz, diced pimientos, drained
  • 3 cups 6 servings, cooked rice, kept warm for serving

Instructions

  • Melt butter in a large sauce pan and add green pepper and mushrooms. Over medium high heat, cook until mushrooms are tender, about 7 minutes.

  • Sir in flour, salt and pepper and cook over medium heat, stirring constantly until mixture begins to bubble.

  • Remove from heat and slowly stir in milk and chicken broth.

  • Heat over medium heat, stirring constantly until bubbly, Let mixture boil for one minute before reducing heat to low.

  • Stir in chicken and pimentos.

  • Add cooked chicken. Continue to cook for 5 minutes or until chicken is hot.
