Ingredients
1poundground beef
1small onionfinely chopped
1carrotfinely chopped
1celery stalkfinely chopped
2clovesgarlicminced
3russet potatoespeeled and diced
32ounceschicken broth
12ouncesVelveeta cheesecubed
2cupsmilk
1/4cupcornstarch mixed with 1/4 cup cold water

Instructions
Brown the ground beef with the onion, carrot, celery, and garlic in a large stockpot or Dutch oven.
When the meat is cooked through, drain grease and stir in the potatoes and chicken broth. Bring the mixture to a boil, then reduce heat to low and simmer for 30 minutes.
When the potatoes are fork-tender, stir in the Velveeta, milk, and cornstarch slurry. Continue simmering another 10 minutes, until the soup has thickened.
Season with salt and pepper to taste before serving.
