Ingredients

  • 1 pound ground beef
  • 1 small onion finely chopped
  • 1 carrot finely chopped
  • 1 celery stalk finely chopped
  • 2 cloves garlic minced
  • 3 russet potatoes peeled and diced
  • 32 ounces chicken broth
  • 12 ounces Velveeta cheese cubed
  • 2 cups milk
  • 1/4 cup cornstarch mixed with 1/4 cup cold water
  • Salt and pepper

Instructions

  • Brown the ground beef with the onion, carrot, celery, and garlic in a large stockpot or Dutch oven.

  • When the meat is cooked through, drain grease and stir in the potatoes and chicken broth. Bring the mixture to a boil, then reduce heat to low and simmer for 30 minutes.

  • When the potatoes are fork-tender, stir in the Velveeta, milk, and cornstarch slurry. Continue simmering another 10 minutes, until the soup has thickened.
