Soft, chewy and made with only a handful of ingredients, these Strawberry Cake Mix Cookies are full of fun, pink flavor! We love to make them for Valentine’s Day, but they would be perfect for a baby shower, kid’s birthday parties or any other festive occasion!

1. Preheat oven to 350 and line a baking sheet with parchment paper. 2. In a large mixing bowl, add cake mix and flour and mix well.

Stir in oil and egg until well combined.

Use a tablespoon portion scoop to scoop dough onto prepared baking sheet.

Gently press to flatten with your hand or the bottom of a drinking glass, until the cookies are about 1/2″ thick.

1. Bake for 8-10 minutes or until center is set and bottom begins to brown. Cool for 2 minutes on the baking sheet before removing to a cooling rack to cool completely.
