Ingredients
1poundbonelessskinless chicken breast, cut into bite-sized pieces
1egg
¼cupmilk
1cupflour
1teaspoonsalt
1teaspoonpepper
1teaspoonpaprika
2cupscoleslaw mix
1cupshredded cheddar cheese
½cupranch dressing
1 to 2teaspoonshot sauce
8flour tortillas
Oil for frying
Instructions
Add oil to a pan and heat over medium heat.
In a shallow bowl, beat together the egg and milk.
In a separate shallow bowl, whisk together the flour, salt, pepper, and paprika.
Dip each chicken piece in the flour mixture, followed by the milk mixture, and into the flour mixture again.
Fry the chicken in the hot oil until golden brown, between 10 and 15 minutes.
Transfer the cooked chicken to a paper towel-lined plate.
Heat the tortillas according to the package instructions. Fill each tortilla with a layer of chicken, topped with coleslaw and cheese.
Make the spicy ranch dressing by stirring together the ranch dressing and hot sauce. Drizzle the sauce over the top of the tacos before serving.
