Twice Baked Mashed Potatoes

3 lbs of potatoes peeled and cut into 1″ pieces 2 tablespoons butter 1/2 cup diced onion 1 cup chopped ham 1 cup sour cream 1/4 cup half and half 1-1/2 cups colby jack cheese divided 1/2 teaspoon salt 1/8 teaspoon black pepper
Cook potatoes in desired way. We like to boil ours. Cook until tender. Mash them.
Preheat oven to 350 and grease a baking or casserole dish. Add butter and mix well.
Stir in onion.
Add ham and stir well.
Stir in your sour cream.
Add half and half.
Add 1 cup of cheese and salt and pepper and mix well.
Pour into prepared baking dish and top with remaining cheese.
Bake for 20-25 minutes or until center is hot.
