Twice Baked Mashed Potatoes

Ingredients

  • 3 lbs of potatoes peeled and cut into 1″ pieces
  • 2 tablespoons butter
  • 1/2 cup diced onion
  • 1 cup chopped ham
  • 1 cup sour cream
  • 1/4 cup half and half
  • 1-1/2 cups colby jack cheese divided
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  • Cook potatoes in desired way. We like to boil ours. Cook until tender. Mash them.
  • Preheat oven to 350 and grease a baking or casserole dish. Add butter and mix well.

  • Stir in onion.
    Add Onions.
  • Add ham and stir well.

  • Stir in your sour cream.
    Add Sour Cream.
  • Add half and half.
    Add Milk.
  • Add 1 cup of cheese and salt and pepper and mix well.

  • Pour into prepared baking dish and top with remaining cheese.
    Top with cheddar cheese.
  • Bake for 20-25 minutes or until center is hot.
