Ingredients

  • 1 lb beef stew meat
  • 1/2 cup chopped onion
  • 1 tablespoon minced garlic
  • 4 cups beef broth
  • 1 cup water
  • 1 can 14.5 oz, diced tomatoes, do not drain
  • 3/4 cup quick cooking barley
  • 1/2 cup diced celery
  • 1/2 cup diced carrots
  • 2 russet potatoes peeled and diced
  • 1 teaspoon dried basil
  • 1/2 teaspoon ground thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • chopped fresh parsley optional for serving

Instructions

  • In a large stock pot, add beef, onion and garlic. Heat over medium heat, stirring frequently until beef is no longer pink.
