Ingredients
1lbbeef stew meat
1/2cupchopped onion
1tablespoonminced garlic
4cupsbeef broth
1cupwater
1can14.5 oz, diced tomatoes, do not drain
3/4cupquick cooking barley
1/2cupdiced celery
1/2cupdiced carrots
2russet potatoespeeled and diced
1teaspoondried basil
1/2teaspoonground thyme
1/2teaspoonsalt
1/4teaspoonground black pepper
chopped fresh parsleyoptional for serving
Instructions
In a large stock pot, add beef, onion and garlic. Heat over medium heat, stirring frequently until beef is no longer pink.
Add broth, water, tomatoes and stir well.
Add celery, carrots, potatoes.
Add barley.
Add spices. Heat over medium high heat until boiling.
Once boiling, cover and reduce heat to simmer for 20 minutes or until vegetables are tender and cooked through.
