1. Line 2 baking sheets with parchment paper. Set aside. 2. In a large mixing bowl, add oatmeal. Set aside. 3. In a saucepan, add butter, sugar and half and half. 4. Heat on medium heat, whisking constantly until bubbly. 5. Boil for 1 minute making sure sugar is completely dissolved. 6. Remove from heat and stir in vanilla. 7. Add peanut butter and mix until smooth. 8. Pour mixture over oatmeal and mix well to evenly coat. 9. Use a portion scoop to scoop cookies onto baking sheet. 10. Refrigerate for 20 minutes or until cool and firm.
