Preheat oven to 400 degrees and grease a muffin pan with nonstick cooking spray. In a medium bowl, whisk together the flour, sugar, baking powder and salt. Set aside.

In a large bowl, mix the egg, oil, and milk until combined.

Stir in the banana and zucchini until mixed.

Add the dry ingredients and stir to combine.

Fill each cup of the muffin pan 2/3 the way full of batter and bake in the preheated oven for 18 to 20 minutes, until a tooth pick inserted in the center of the muffin comes out clean.
