Cheesecake Factory Copycat Pasta Da Vinci

This Pasta Da Vinci is a tasty Cheesecake Factory Copycat Recipe that has penne pasta mixed with chicken is a creamy, dark red Madeira wine sauce. It's so easy to make and now you don't have to head to Cheesecake Factory and wait for a table!

Ingredients

  • 1 lb penne pasta
  • 5 tablespoons butter divided
  • 1 tablespoon minced garlic
  • 1/4 red onion chopped
  • 1 lb shiitake mushrooms quartered
  • 1 lb chicken breast cubed
  • 2 tablespoons flour
  • 1 cup Madeira wine
  • 2 tablespoons heavy whipping cream
  • chopped fresh parsley
  • shaved parmesan cheese

Instructions

  • Add pasta to a stock pot and cook until desired tenderness. Drain and keep warm.
  • Add 2 tablespoons butter, garlic, onion and mushrooms to a large skillet. Heat over medium high until onions and mushrooms are tender. Remove from pan and set aside.
    Saute mushrooms, onions, garlic and butter
  • Add chicken and cook until no longer pink. Remove from pan and set aside.

  • Add 3 tablespoons butter and flour and mix over low heat to form a roux.

  • Add wine and whisk, bringing to a boil. Reduce heat to simmer for 6-8 minutes as wine reduces.

  • Add cream and heat until a low boil.

  • Over low heat add in the chicken and mushrooms and mix well until heated through.
    Mix until heated through
  • Serve over pasta topped with chopped parsley and cheese.
