Ingredients

Cowboy Pasta Salad Ingredients:

  • 1 box 16 oz, elbow macaroni pasta
  • 1 lb ground beef browned
  • 12 bacon slices cooked and chopped
  • 1 can 15 oz, corn, drained
  • 1 can 15 oz, black beans drained and rinsed
  • 1 pint grape tomatoes, cut in half
  • 1-1/2 cups shredded cheddar cheese
  • 2 green onions sliced
  • 1 teaspoon cumin
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/3 cup chopped fresh cilantro

Dressing Ingredients:

  • 1 cup real mayonnaise
  • 1/2 cup barbecue sauce
  • 1/4 cup mustard
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons hot sauce

Instructions

  • Prepare pasta according to package directions. Drain and rinse with cold water.
  • Cook ground beef and drain. Cook bacon extra crispy chop into small pieces.
  • Combine beef, bacon, corn, black beans, tomatoes, onions, and pasta in large mixing bowl and mix well.
  • Add cumin, onion powder, garlic powder, salt and pepper and mix well.
  • In a small bowl, combine mayonnaise, barbecue sauce, mustard, Worcestershire sauce and hot sauce and mix well until smooth.
  • Pour over pasta and mix well until evenly coated.
  • Stir in cilantro and cheese.
  • Refrigerate for 4 hours or overnight for flavors to mingle.
  • Mix well before serving.
