Smothered Okra

This Smothered Okra is a classic Cajun Recipe that is bursting with southern flavors. Made as a vegetarian dish, you can easily add chicken, sausage or shrimp to it as well!

Ingredients

  • 2 pounds okra sliced
  • 2 teaspoons Creole seasoning
  • 2 small onions chopped
  • 3 cloves garlic minced
  • 1 10- ounce can diced tomatoes
  • 1/3 cup vegetable oil

Instructions

  • Combine all ingredients in a large skillet. Stir to mix.
    Smothered Okra Ingredients include tomatoes, garlic and onions.
  • Cover and cook over low heat for 1 ½ to 2 hours, stirring frequently.
  • When the slime is gone from the okra, remove the lid and cook an additional 10 to 15 minutes until remaining liquid has been reduced.
