  • 1 eggplant sliced
  • 3 eggs
  • 1 tablespoon milk
  • 1 cup breadcrumbs
  • 1 tablespoon Italian seasoning
  • ½ teaspoon salt
  • 5 basil leaves
  • 2 Roma tomatoes sliced
  • 5 slices mozzarella cheese
  • Oil for frying


  1. Preheat the oven to 275 degrees. Line a baking sheet with parchment paper.
  2. Pour around one inch of oil in a large skillet. Heat over medium heat.
  3. In a small bowl, whisk together the eggs and milk until combined.
  4. In a separate bowl, whisk together the breadcrumbs, Italian seasoning and salt.
  5. Dip each eggplant in the eggs, then the breadcrumbs.

  6. Place the coated eggplant in the hot oil and fry each side for around three minutes, until golden brown.

  7. Place five eggplant slices on the baking sheet. Top the slice with one basil leave, one slice of tomato, one slice of mozzarella cheese, and another slice of eggplant.
  8. Bake in the preheated oven for five minutes, until the cheese has softened but is not fully melted. Serve immediately.
