Corn Casserole with Cream Cheese

This Corn Casserole with Cream Cheese is a quick and easy side dish for any occasion. Corn is baked to bubbly perfection in a mixture of cream cheese, milk and bacon and then topped with sharp cheddar cheese. It's comfort food at it's best!

Ingredients

  • ½ cup butter melted
  • 1 8- ounce package cream cheese softened
  • ½ cup milk
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 2 16- ounce packages frozen corn
  • 5 strips bacon cooked and finely chopped
  • 2 cups shredded sharp cheddar cheese separated

Instructions

  • Preheat the oven to 375 degrees.
  • In a large bowl, whisk together the melted butter, cream cheese, milk, salt, and pepper until well combined.
  • Add the corn, bacon, and one cup of shredded cheese. Stir to coat the corn with the cream cheese mixture.
  • Pour the mixture into a 9x13 baking dish and bake in the preheated oven for 20 minutes. Then, remove the casserole and top with remaining shredded cheese. Return to the oven and bake for 10 minutes, until cheese is melted.
