Sweet Potato Bites

Ingredients

  • 3 Medium Sweet Potatoes Peeled and cut into slices about 1/4 inch thick. I use only to slices from the middle. 3 potatoes should get you enough to do this.
  • 2 Tbsp Butter
  • 1 Tsp Maple Syrup
  • 12 Jumbo Marshmallows
  • 4 Slices Bacon Cooked extra crispy

Instructions

  • Preheat oven to 400 degrees.
  • Cook bacon extra crispy in your desired method. Cut up into small pieces.
  • While Bacon is cooking, peel Sweet Potatoes and slice into discs about 1/4 inch thick. Place in baking tray lined with parchment paper or aluminum foil.
  • Brush with melted butter.
  • Brush with Syrup and flip discs with a spatula to make sure both sides are evenly coated.
  • Bake for 20 minutes, flipping them over halfway through.
  • Top with Jumbo Marshmallow and put back in oven to broil. Watch closely and take out as soon as the Marshmallow becomes golden and melted.
  • Immediately put bacon on melted Marshmallows and serve.
