In a large bowl, beat together the cream cheese, butter, egg, vanilla, and salt.
Add in the powdered sugar, then flour, beating between each addition until a stiff dough forms.
Make sure that you chill the dough for eat least two hours. Or else you cookies will be flat!
Not a fan of blueberry? You can use any pie filling! Strawberry, Cherry, Apple or any other flavor would work. This summer, I plan on making this recipe with half the cookies blueberry and the other half strawberry. It will be a great Fourth of July Dessert Recipe!
Add icing to these cookies for a little extra flair! For an a super easy icing, just mix together 1 cup of confectioners (powdered) sugar, 1/2 tsp vanilla extract and 2 tablespoons of whole milk.
You will know you cookies are done baking when the edges just start to get a little brown around the edges.
