Blueberry Cheesecake Cookies

Cheesecake in a cookie form?!?! Yes, please! These Blueberry Cheesecake Cookies are easy to make with just a handful of simple ingredients and topped with blueberry pie filling. 

Ingredients

  • 3 ounces cream cheese room temperature
  • 1 stick 1/2 cup unsalted butter, room temperature
  • 1 egg
  • 1 teaspoon vanilla
  • ¼ teaspoon salt
  • 1 cup powdered sugar
  • 1 cup flour
  • 1 20- ounce can blueberry pie filling

Instructions

  • In a large bowl, beat together the cream cheese, butter, egg, vanilla, and salt.
    Mix cream cheese, sugar, eggs and butter.
  • Add in the powdered sugar, then flour, beating between each addition until a stiff dough forms.
    Add powdered sugar
  • Cover the bowl and chill in the refrigerator for 2 hours.
  • Preheat oven to 325 degrees and line a baking pan with parchment paper.
  • Scoop out the dough and form into one-inch balls. Place the cookie balls on the lined baking sheet and make an indention in the center of each cookie with your thumb.
    Scoop out dough onto parchment lined cookie sheet.
  • Bake in the preheated oven for 12-15 minutes, until cookies are browned on the bottom.
  • Remove the cookies from the baking sheet to a wire cooling rack to cool. When cooled completely, top each cookie with a spoonful of blueberry pie filling.
    Once cheesecake bites have cooled, add blueberry filling.

Notes

Make sure that you chill the dough for eat least two hours. Or else you cookies will be flat!
Not a fan of blueberry? You can use any pie filling! Strawberry, Cherry, Apple or any other flavor would work. This summer, I plan on making this recipe with half the cookies blueberry and the other half strawberry. It will be a great Fourth of July Dessert Recipe!
Add icing to these cookies for a little extra flair! For an a super easy icing, just mix together 1 cup of confectioners (powdered) sugar, 1/2 tsp vanilla extract and 2 tablespoons of whole milk. 
You will know you cookies are done baking when the edges just start to get a little brown around the edges.
