Instant Pot Tortellini Soup

I'm loving this recipe for Instant Pot Tortellini Soup! It comes out so rich and creamy, and, made in your pressure cooker, it is soooo easy! It is all made in one pot, so no messy clean up makes this a great option for busy weeknight dinners! Tender Tortellini Pasta is mixed with onion, garlic, tomatoes and spinach, it's enough to warm you up on even the coldest days! While this is a meatless soup, I've also added instructions to add chicken to it as well.

Ingredients

  • 1 tbsp extra virgin olive oil
  • 1 medium onion chopped
  • 3 garlic cloves minced
  • 3 tbsp tomato paste
  • 1 tsp ground cumin
  • 1 tsp Italian spice
  • 4 cups tortellini
  • 6 oz. fresh spinach
  • 5 cups vegetable broth
  • 30 oz. crushed tomatoes
  • 1 cup cooking cream

Instructions

  • Set Instant Pot to its saute setting and heat olive oil in inner pot.
  • Add onion and garlic and cook for 2-3 minutes.
  • Add tomato paste and toss for another 2-3 minutes.
  • Add ground cumin and Italian spice and mix.

  • Turn off the saute function and add tortellini and fresh spinach.
  • Follow by adding vegetable broth and crushed tomatoes.
  • Attach lid to the Instant Pot and set on high pressure for 10 minutes.
  • Once time is up, release the pressure.
  • Remove lid from the Instant Pot and stir in cooking cream.
  • Serve in individual bowls and enjoy.

Notes

Adding chicken to just about any Instant Pot recipe is always a breeze. For this recipe, just add 1.5 lbs of chicken to the soup when you add the vegetable broth and tomatoes, just before you close to lid to cook. You can use either boneless skinless chicken breasts or thighs, whichever you prefer. Put the chicken into the pressure cooker whole and, when done cooking, cut them up and put them back in when you put the cooking cream in.
