Ingredients

  • 1 pound dry red beans rinsed
  • 1 package andouille sausage thinly sliced
  • 6 cups chicken broth
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 6 ounces tomato paste
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 cups white rice prepared
  • Salt and pepper to taste
