Brownie Ingredients:
- 1/2 cup 1 stick, butter, softened
- 3/4 cup granulated sugar
- 2 eggs
- 2 tablespoons lemon juice juice of half of a fresh lemon
- 1 tablespoon lemon zest zest of one lemon
- 3/4 cup all purpose flour
- 1/2 teaspoon salt
Icing Ingredients:
- 1/4 cup powdered sugar
- 1-3 teaspoons lemon juice
Preheat oven to 350 and grease an 8x8 baking pan with nonstick cooking spray.
Beat together butter and sugar until fluffy, about 3-5 minutes.
Scrape down bowl halfway through beating. Add eggs, lemon juice and zest. Beat well.
Add flour and salt and beat just until combined.
Pour batter into prepared baking dish and spread evenly.
Bake for 23-25 minutes or until edges begin to turn golden and when a toothpick inserted in the center comes out clean. Let stand to cool.
Mix together powdered sugar and lemon juice. Drizzle onto brownies and cut into squares before serving.
