Trinidad Macaroni Pie Recipe

This Trinidad Macaroni Pie Recipe is a traditional classic Caribbean dish. With savory cheddar cheese, eggs, macaroni and evaporated milk. It is something exotic and comforting at the same time!

Ingredients

  • 8 ounces elbow macaroni cooked
  • 2 eggs beaten
  • 2 cups shredded cheddar cheese
  • 1 can 12 oz, evaporated milk
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • Preheat oven to 350 and grease a 9×13 baking pan with nonstick cooking spray. Set aside.
  • Add pasta, eggs, cheese, evaporated milk, salt and pepper in a large mixing bowl and mix well.
  • Pour mixture into prepared pan. Smooth with the back of a spoon.
  • Bake for 30 minutes. Remove from oven and let stand for 2-3 minutes before cutting into squares and serving.
  • Serves 8-12

Notes

While this version of the recipe is pretty traditional, my mind is turning on how many other ways I could make this traditional caribbean macaroni pie. I’d love to try using different type of cheese such as feta, or even a pepperjack to make it a little spicy! I also think introducing spinach would be really good. Or possibly putting a meat, like ham, into this dish? Yes please!
