pineapple bread pudding

This pineapple bread pudding is an amazingly easy recipe with only 6 ingredients and 10 minutes of preparation. Just slightly sweet, it works as a dessert, side dish or even a breakfast! It's great anytime of year, but we love to make it during the holidays. It goes great with an Easter or Christmas ham!

Ingredients

  • 1 loaf 11 oz, french bread, sliced into 1/2" cubes
  • 5 eggs
  • 1 cup white sugar
  • 3/4 cup butter melted
  • 1 can 20 oz, crushed pineapple, drained
  • 1/2 teaspoon ground cinnamon
  • fresh whipped topping optional for serving

Instructions

  • Preheat oven to 350 and grease a 2-1/2 quart casserole dish with nonstick cooking spray. Set aside.
  • Add eggs to a large bowl and beat well.

  • Add sugar, butter, pineapple and cinnamon to mixing bowl and mix well. Use a stand mixer if needed.

  • Fold in bread and mix to evenly coat.

  • Bake for 30-35 minutes or until knife inserted in the center comes out clean. Remove from oven and let stand to cool until warm. Serve warm topped with whipped topping if desired.
