Pickled Red Onions

These Pickled Red Onions are so quick and easy to make! They liven up just about ANY dish and, best of all, they are completely sugar free! This means you can add some serious flair to any recipe with this Keto, Whole30, Vegan, Vegetarian and Gluten Free magic!

Ingredients

  • 3 red onions cut into thin halfmoon slices
  • 3 garlic cloves peeled and cut in half
  • ground black pepper
  • 3 cups water
  • 3/4 cup white vinegar
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 3 pint jars

Instructions

  • Divide onion slices into each of the three jars and pack them with onions.
    Slice Onions
  • Top each jar with 2 garlic halves.
    Top with garlic cloves in jar
  • Season the top of each jar with ground black pepper. Set aside.
    Top onions with pepper
  • Add water, vinegar, salt and pepper into a skillet and heat over medium high heat until boiling. Let boil for 2 minutes before removing from heat.

  • Carefully poor into each jar. Let stand to cool.
    Pour vinegar mix over onions
  • Cover and refrigerate until ready to use.
