Ingredients

  • 1/2 cup vegetable oil
  • 2/3 cup white sugar
  • 2 eggs
  • 3/4 cup mashed ripe bananas about 2 small bananas
  • 1 teaspoon vanilla
  • 1-2/3 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup diced fresh strawberries

Instructions

  • Preheat oven to 350 and line 15 regular size muffin cups with a paper liner. Set aside.
  • In a mixing bowl, add vegetable oil, sugar and eggs and mix well.
