This Cornbread Cowboy Casserole is an easy family dinner that is sure to fill up even the hungriest tummies! A cheesy layer of seasoned ground beef, onions and beans is topped with cornbread and baked to perfection for a delicious casserole dish perfect for a busy weeknight!

Ingredients

  • 1 pound ground beef
  • 1/2 an onion chopped
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 can 16 oz, pork and beans
  • 2 cups shredded cheddar cheese
  • 1 box 8.5 oz, cornbread mix
  • 1 can 14.5 oz, creamed corn
  • 1/2 cup milk
  • 1 egg

Instructions

  • Preheat oven to 350 and grease a 2-1/2 quart casserole dish with nonstick cooking spray. Set aside.
  • Add beef and onion to a pan or large skillet and heat over medium high heat, stir frequently until browned.

  • Drain grease and season beef mixture with paprika, salt and pepper. Mix well. Pour into prepared casserole dish and spread evenly.

  • Top with beans and shredded cheese.

  • Mix together cornbread mix, creamed corn, milk and egg.

  • Pour on top of meat mixture in baking dish and spread evenly.

  • Bake for 40-50 minutes or until center is set when a toothpick is inserted. Let stand for a few minutes before serving.
