PINEAPPLE BREAD PUDDING

– 1 loaf 11 oz, french bread, sliced into 1/2" cubes – 5 eggs – 1 cup white sugar – 3/4 cup butter melted – 1 can 20 oz, crushed pineapple, drained – 1/2 teaspoon ground cinnamon – fresh whipped topping optional for serving

– Preheat oven to 350 and grease a 2-1/2 quart casserole dish with nonstick cooking spray. Set aside. – Add eggs to a large bowl and beat well.

- Add sugar, butter, pineapple and cinnamon to mixing bowl and mix well. Use a stand mixer if needed.

- Fold in bread and mix to evenly coat.

Pour into prepared baking dish.

- Bake for 30-35 minutes or until knife inserted in the center comes out clean. Remove from oven and let stand to cool until warm. Serve warm topped with whipped topping if desired.
